Firstly... Welcome! I remember bugging my father to do exactly the same when robot wars was on... sadly nothing ever got made beyond cardboard mock ups.

All looks good, there is once change you can do to save a bit of money. We bulk buy our 1000RPM motors from china, given you get 2 for the price of 1 being shipped from the US anyway, and they are on ebay from several sellers: http://www.ebay.co.uk/itm/2-x-12V-DC...item4d02562621

For the lifter you will need a servo, you plug it straight into the receiver (no ESC required) but that's not my domain so someone else will have to answer that.

I would also suggest getting 10A ESC's from Botbitz in Australia: http://www.botbitz.com/index.php?rou...&product_id=56
Most people use them, me included, and if you burn one out at an event its good to know someone will have spares. There is nothing wrong with the Sabertooth, buts its a lot of money and if it goes boom then you will be out.

I have just bought that motor myself for a new spinner, I was going to go with direct drive for a drum but a 2:1 ratio on that bar should be suitable, you might even be able to take it up to 150mm/6" without much issue.

I agree with the Botbitz 10A suggestion, I have both but I use the sabretooths in antweights only.
I`m currently using two Botbitz each running three 1000rpm motors to make a very effective six wheel drive robot. (Limpet XS)
Doon`t forget you`ll need batteries and the relevant charger.
